About

Born in Louisville, Kentucky, and raised in Tijuana, Mexico, Paul Wallace has always been interested in the kitchen – growing up with a Marine Chef as a dad and a Sonoran Mexican Mom helped too. Both countries have always been part of his inspiration in the kitchen, which has allowed him to create his own personal cooking style, sourced from a fusion of cuisines, which he calls “BajaSouthern Cuisine”. By drawing inspiration from Asian Fusion, American, Mexican, Baja, SoCal, TexMex, Southern, and Comfort cuisines, he brings his unique style of cooking across Tijuana and San Diego, providing the best of both worlds.

Wallace is a self-proclaimed “son of the border”; he has been crossing the world’s busiest border since he was 17 to work. His younger days consisted of working in San Diego and starting Culinary School in Tijuana, which taught him how crucial discipline was in his life.

Being a full-time student and a full-time cook, he quickly elevated through San Diego’s kitchen ranks. Once he became a full-time worker, he noticed that “to make it in this world you have to be an entrepreneur too”. So, he founded Group Wallace, a brand that specializes in Catering and Private 3- Course Chef Dinners.

Chef Paul Wallace has a variety of experience under his belt, including eight years in the hotel business (at Paradise Point Resort & Spa/The Marriott/Hotel Republic to name a few) and television features on both the Local News and “E Sabor de Aaron Sanchez”, with Celebrity Chef Aaron Sanchez. He was also mentored by Michelin Top Chef Ressul Rassallat and has worked with some of the best chefs in Baja including Javier Plascencia, Ryan Steyn, and Ruffo Ibarra.

In 2022, he accepted an amazing opportunity: Chef Paul currently embraces and prioritizes his Role as Storyhouse Distillery’s Executive Chef. In addition, he is a proud owner/executive chef at the following establishments: Mr. Munchies Food Truck (San Diego), El BajAmericano(Tijuana), Grupo Wallace(Tijuana), Empower Hour (Tijuana & San Diego)(Culinary Consulting )
