Originally from the tiny island of Oahu in Hawaii, Executive Chef Joseph Nakayama-Williams comes from a modest beginning. Raised by his grandfather, a commercial fisherman, in the rural countryside on the west side of his island, he learned from a young age how to respect and live off the sea and land. Those moments fishing, cooking, and eating with his grandfather planted the seeds for his love for the culinary field.

He started his career as a dishwasher, working his way up the ranks to chef, at various restaurants throughout Hawaii for the better part of a decade. An opportunity then arose in Washington State to experience and hone his skills in a fine dining restaurant atmosphere, where he spent the next three years. He then decided to seek greener pastures, landing in San Diego, where he currently serves as Executive Chef for The ONE Group’s modern steakhouse STK.
