About

Born in San Diego, California, Chef Brennan attended La Mesa’s National Culinary School. After training, he embarked on a culinary journey to further hone his cooking skills working at some of the city’s premiere restaurants and hotels. Chef Baum has worked at Flemings Steakhouse Downtown, the Hyatt Regency Aventine in La Jolla and Donovan’s Steak and Chop House where he served as Executive Chef.

In 2017 Chef Brennan joined Viejas Casino and Resort overseeing the award-winning Grove Steakhouse. He was recently promoted to Fine Dining Room Chef where he currently resides. Throughout his career Chef Baum has received multiple recognition awards and considers being at Viejas Casino and Resort a career highlight.

An avid sports fan, he supports his favorite teams, Manchester United and the San Diego Padres. Chef Baum also enjoys golf, cooking and spending time with his wife Ann Marie and son Camden. Chef Brennan feels it is his responsibility to enhance the natural flavors of ingredients and to work with love, passion and perseverance.
