Christian “Boomer” Schilling, a native Californian, has been engaged in the culinary business since his early teen years. At an early age he read The Joys of Cooking to help prepare meals for his siblings as his mother was working three jobs. What began as an interest, soon became a passion. In his early 20’s, Boomer helped launch Le Bon Four, an artisan bakery in Peterborough, New Hampshire. He quickly became the Master Baker and helped to grow the business with distribution throughout Southern New Hampshire. After serving in the US Navy during the Persian Gulf War, Boomer became intrigued with the smoking low and slow process. Returning to San Diego, he launched SoCAL Southern BBQ in 2015. SoCAL Southern BBQ is an Encinitas based catering company serving all of San Diego County and parts of Los Angeles. If you’re visiting Encinitas, you will most likely find Boomer smoking Tri Tip, Pulled Pork, Ribs and Brisket at The American Legion Post 416, where he not only is a Veteran member, he serves on their Executive Board. On Saturdays you can find him at Post 416 serving up some delicious BBQ and tending bar between 10am to 5pm.
