Bob Schultz AKA “Bob the Butcher” has extensive knowledge of the protein industry. In 1967 at the age of thirteen years old, Bob began working in his father’s Denver Butcher shop. This was the era of hanging meat, when nothing came in a box. Each cut was made by hand, which offered the opportunity to understand each sub primal cut. Bob bought his father’s shop in 1981 and continued running the business for 19 years. After the butcher shop, he joined a broad liner as a meat specialist, where he acquired the knowledge of current trends in the industry.
Today, Bob is the Brand Ambassador for One World Beef, a Brandt family-owned beef company based in Brawley California. He works as the company spokesperson, expanding their portfolio of brands by liaising with chefs and restaurants accounts to extend their international reach. Bob is a Certified Master Butcher and Certified Angus Beef Specialist. Some of his skills include a talent for understanding commodities, margins, building market share and brand awareness.
Bob has only worked in one industry: the meat industry. He has a passion for sharing his expertise with others and explaining the meat cuts and utilization of the animal so everyone can come away knowing more about the protein industry.
