Chef Alex Carballo is the executive cooperate chef of Leucadia Co in Encinitas California. He assist in the company’s culinary direction including Hamburger Hut, moto deli, and Valentina. As well assist with day to day operations of the restaurants, and conducts private and special event dinners on behalf of the restaurant and Leucadia Co. A graduate of San Diego State University and the National Culinary & Baking School, Chef Carballo has held the position of executive chef at many prestigious San Diego restaurants, indigo grill, The Fishery, and Carte Blanchestone brewing . He is a practicing member of Slow Food San Diego, which links the pleasure of food with a commitment to the community and environment. He believes in supporting local businesses and is a fixture at Southern California farmer’s markets; scouring for local organic ingredients to feature in his cooking. Chef Carballo serves as a board member for Chef Celebration, is an advisor for the California Department of Education’s “California Farm to School Task Force,” and donates his time to many charities in Southern California.
