Valle’s summer menu features a series of culinary highlights that celebrate the vibrant flavors of the season. Guests can look forward to the local Ike Jime rock cod aguachile, a refreshing dish enhanced with a chile güero leche de tigre — a zesty, tangy citrus sauce. Another standout is the sweetbreads taco with pipián verde, a rich and flavorful green sauce made from roasted pumpkin seeds and green chilies. For those wanting to indulge on a smaller tasting menu, each night Chef Roberto curates a 4-course experience at El Sillón (the couch) exclusively offered at the bar of the restaurant. The El Sillón experience runs under a limited seating twice a night at 4pm and 7 pm, reservations are recommended.
