San Diego Bay Wine + Food Festival Hosts Sustainable Farm-to-Table Vegetarian Dinner in Partnership with Verbena Kitchen
The San Diego Bay Wine + Food Festival is thrilled to collaborate with the talented food and beverage team at Verbena Kitchen to host a vegetarian dinner experience, a first for the festival. Join Chef Ronnie Schwandt and General Manager and mixologist Dallas Juanes for an elevated evening learning and tasting the complexities of plant-based eating and fermentation in its many forms. The evening will be entirely vegetarian and the best of farm-to-table dining, consisting of five courses each paired with a low ABV spirit to showcase the dramatic changes that wine-based cocktails have evolved to. With both creatives using fermentation methods across different ingredients, guests unpack the major role that fermentation playson flavor profiles.
Using local, sustainable, and seasonal ingredients the Verbena team looks forward to showcasing fall inspired dishes like an apple, parsnip, and white miso soup, seared celery root served with pepper chimichurri and spiced pepitas, and a roasted pumpkin puree with charred spiced cabbage and a currant vinaigrette. Guests also get a taste of autumn through the craft cocktails which include a barrel aged fermented gin with pumpkin spice milk wash, and cranberry tangerine juice and a fermented tequila with chili syrup and orange liqueur.
Hosted in the welcoming dining room of Verbena Kitchen, this vegetarian dinner will be a treat for those who eat plant-based on a regular basis and an eye-opener to those who do not, creating a whole new expectation of what vegetarian style eating can look and taste like. Marking the first vegetarian event that the San Diego Bay Wine + Food Festival has hosted, producer Michelle Metter looks forward to exploring the food and beverage boundaries that will be pushed as well as sharing the importance of eating locally and sustainably.
