La Boca, Tabera y MAS

Chef James Campbell Caruso is leading a Tapas Revolution in New Mexico. He is the chef owner of two of Santa Fe's top restaurants, La Boca and Taberna. Last year he partnered with the historic Hotel Andaluz to open a new Spanish Restaurant, MAS in downtown Albuquerque. Caruso is an eight-time James Beard Award Nominee, and was one of only four chefs twice nominated to compete in the Sherry Council of America's "Copa Jerez International Food and Sherry Pairing Competition". Prior to opening the beloved Santa Fe restaurant, La Boca, Chef James served as Chef at La Casa Sena, chef/instructor at the Santa Fe School of Cooking, and Executive Chef at the legendary El Farol where he wrote the cookbook, El Farol: Tapas and Spanish Cuisine (Gibbs Smith, 2004) Opened in 2006 by Chef James, La Boca is an intimate Spanish tapas restaurant in the heart of downtown Santa Fe. Influenced by his travels in Spain, Chef James cultivates synergies of authentic Spanish ingredients to create dishes both traditional and modern. Chef James' latest cookbook, Espana: Exploring the Flavors of Spain, contains 240 pages of recipes that set out to generously share his unique .cooking style.
