The Blind Burro
Sara Polczynski is a Consulting Executive Chef for The Blind Burro, creating authentic south of the border street food, with a modern flair and an emphasis on local sustainable seafood, heavily inspired by the Baja region.
A graduate of the California Culinary Academy in San Francisco, Polczynski has spent the last 16 years working in the kitchens of San Diego’s top restaurants. After several positions, including five years as the corporate pastry chef for the Cohn Restaurant Group, she stepped out on her own as a restaurant consultant where she revamped sweet and savory menus across downtown. In addition to consulting, Polczynski is currently an Associate Professor of Culinary Arts for the San Diego Community College-Continuing Education program, where she heads the baking department.
Her love for travel has led her around the world in search of cultural and culinary experiences. As a native of San Diego, Polczynski is well versed in authentic Latin cuisine. Nevertheless, each Fall, she embarks on a remarkable culinary adventure through Mexico, under the guidance of Celebrity Chefs Rick Bayless and Ricardo Munoz, which revolves around intensive cooking classes for food professionals.
“I am excited to bring my experiences with the street food of Mexico to San Diego’s East Village. The simplicity of ingredients, yet the complexity of flavors are truly inspiring,” said Polczynski, Consulting Executive Chef for The Blind Burro. “I couldn’t think of a better way to become more entrenched in this cuisine than spending time in Mexico with some of the worlds best chefs, learning, cooking and eating our way through the country.”
